1. Tell us a bit about your business and how it started
My cake business, DOSE of ROSE, began as a way to honour my mum’s legacy of living life with joy. I was heartbroken when my mum’s cancer returned. I flew back to be with her before her passing, and she left me with unforgettable words: Live life happy. I searched for what would truly make me happy and remembered the first time I baked a cake for my daughter's birthday. The actual baking was not so successful, but when I tried piping for decoration, I felt something special, so during my mum's one-year anniversary ritual in Korea, I learned the intricate art of buttercream flower piping, a craft that perfectly blended beauty, artistry, and meaning. When I came back to the UK, I knew I wanted to share this less-sugar, well-balanced cake style with couples who value both elegance and flavour. Every cake is crafted to be so beautiful you almost don’t want to cut it – yet so delicious you can’t resist. So I set up cake business and It's been so lovely to see my customers' almost shocked happy faces when they saw the cakes.
2. What makes your work eco-friendly or sustainable?
I use locally produced butter from independent makers, fresh ingredients, and avoid excess sugar so flavours shine naturally. I also offer vegan cake with vegan buttercream flower decoration. My cake boxes are recyclable, and I work with suppliers who share a commitment to sustainable sourcing. I’m also developing a charity project to support disadvantaged women – because I believe sustainability is about caring for people as well as the planet.
3. What can couples expect to see from you at the Eco Wedding Festival?
Couples can expect to see buttercream blooms so realistic you’ll be tempted to smell them. I’ll be showcasing my buttercream flower piping technique live, so you can watch each petal take shape. You’ll also have the chance to taste my award-winning vanilla cake – a perfect example of how a luxury wedding cake can be both sustainable and utterly unforgettable.
4. What’s your top tip for planning a sustainable wedding?
Choose suppliers who truly share your values. A sustainable wedding doesn’t mean sacrificing beauty or joy – it’s about working with people who care for the planet and its people as much as they care about their craft. Whether it’s flowers, food, or favours, ask where materials are sourced and how waste is minimised. Those small, thoughtful choices add up to a wedding that feels good in every way.
You can catch Seohyun and her beautiful creations at the Eco Wedding Festival on Sunday 5th October. You can also see more examples of her work on her website.
